The Blue Star Caprese Stack ($7) salad sports two thick slices of tomato with slices of the creamy cheese between them. The dish is topped with white balsamic gastrique and ribbons of fresh basil.
You can also order the cheese from a cheese-tray lineup for $5 per ounce. It made for a tasty dessert with the extra sweet champagne grapes served alongside.
Borriello explosion
From one little takeout place in downtown Colorado Springs in 1999, Borriello Brothers NY Pizza has expanded to five locations and now plans to open two more.
The thin-crust pizza place will soon take over two Rotelli locations: 15910 Jackson Creek Parkway and 3240 Centennial Blvd.

Burgers made with Colorado-raised beef are the signature dish. Especially good was the Slopper Burger ($9.99), an open-faced burger smothered in green chili.
