Mr Ames has served as an industry consultant to Benihana since July 2009, and has more than 25 years of restaurant operations experience. Prior to that, he held the position of COO of Cosi and has previously served in senior operating positions at The Patina Group/Restaurant Associates, Elephant Bar Restaurants and California Pizza Kitchen.
